  • 1 x Roll Butterscotch Cookies, Refrigerated, slice and bake
  • 1 c. Sugar
  • 16 ounce Cream Cheese
  • 2 med Large eggs
  • 2 tsp Rum Extract

  1. Slice cookie dough 1/4-inch thick and place in bottoms of 2 greased 8 x 8-inch pans. Bake at 375 degrees for 15 to 20 min or possibly till lightly browned. (Will be puffy when removed from oven.) Beat cream cheese and sugar till well mixed. Add in Large eggs and extract. Beat till smooth. Pour half of cheese mix over each baked cookie layer. Bake at 375 degrees 20 to 25 min. Cold slightly, then chill at least one hour. Cut into 20 bars per pan.
