It's HOT here in NJ and the last thing I feel like doing is spending too much time on dinner. I want quick, easy and COOLING! This din din hit the spot and was PERFECT. It was one of those times where I'm eating something raw...and I can just feel that my body is smiling on the inside. Hard to explain, but you just know it's good! Have you experienced that? What would you call it?

Burrito or Taco Shells

Romaine leaves

Toppings

Mix all ingredients except bell peppers in food processor. Add peppers and pulse, leaving them chunky. Season to taste. Refrigerate and serve.

Assemble

Fill romaine leaves with "meat," "refried beans," salsa and toppings. I find it much easier to fold in half, lengthwise...pick up and eat. It's messy, but soooo yummy. No bloated belly after this meal, but a very happy one!
