- 2 1/2 cups confectionersâ sugar
- 2 pinches of ground cardamom
- 5 T fresh orange juice
- 1 T fresh lemon juice
- 1/4 teaspoon finely grated orange zest

,%20but%20on%20the%20other%20hand%20it%20could%20be%20gone%20because%20John%20had%20eaten%20it.%20So%20clearly%20I%20had%20no%20choice.%3C/p%3E%3Cp%3EI%20made%203%20cakes%20for%20my%20children%E2%80%99s%20school%E2%80%99s%20cakewalk,%20of%20which%20this%20was%20one.%20I%20have%20developed%20a%20system,%20when%20baking%20for%20other%20people,%20of%20making%20enough%20batter%20for%20a%2012%20cup%20bundt%20pan%20and%20then%20using%20a%2010%20cup%20bundt%20pan.%20That%20way%20I%20get%20to%20try%20the%20cake%20in%20its%20miniature%20form%20before%20sending%20it%20out%20into%20the%20world.%20I%20learned%20a%20lesson%20the%20hard%20way%20with%20this%20one,%20however.%20When%20baking%20desserts%20for%20a%20cakewalk%20at%20an%20elementary%20school,%20do%20not%20put%20the%20word%20%E2%80%9Czucchini%E2%80%9D%20on%20the%20box.%20Or%20it%20will%20get%20chosen%20last.%20Alas.%20Their%20loss.%20Silly%20kids.%3C/p%3E%3Cp%3ESo%20about%20this%20specific%20cake?%20Oh%20wow%20good.%20Everyone%20who%20tried%20it,%20loved%20it.%20I%20adapted%20a%20Martha%20Stewart%20recipe,%20and%20then%20doubled%20it.%20It%20claimed%20to%20call%20for%20a%206%20cup%20bundt%20pan,%20but%20when%20I%20doubled%20it,%20it%20filled%20way%20more%20than%2012%20cups%20worth%20of%20pans.%20Go%20figure.%20No%20one%20was%20sad%20to%20have%20extra%20of%20this%20cake%20sitting%20around%20though.%20I%20suggest%20you%20fill%20a%2012%20cup%20bundt%20pan,%20and%20if%20you%20have%20extra%20fill%20a%20mini%20loaf%20pan%20or%202.%3C/p%3E%3Cp%3ECitrus%20Glazed%20Spiced%20Zucchini%20Bundt%20Cake%3C/p%3E%3Cp%3EAdapted%20from%20Martha%20Stewart%3C/p%3E%3Cp%3EFor%20the%20cake:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20F.%20Spray%20a%2012%20cup%20bundt%20pan%20with%20a%20grease/flour%20combo,%20like%20Baker%E2%80%99s%20Joy.%3C/p%3E%3Cp%3EWhisk%20together%20flour,%20baking%20powder,%20spices,%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3EGrate%20zucchini%20in%20a%20food%20processor%20or%20with%20a%20box%20grater.%20After%20measuring%20out%205%20cups,%20squeeze%20them%20dry%20in%20a%20kitchen%20towel%20over%20the%20sink.%20Set%20aside.%3C/p%3E%3Cp%3EStir%20together%20eggs%20and%20sugar,%20then%20stir%20in%20melted%20butter,%20zucchini,%20vanilla%20and%20orange%20zest%20and%20juice.%20Gently%20stir%20in%20flour%20mixture.%20Scrape%20the%20batter%20into%20pan.%20If%20it%20starts%20to%20get%20too%20full%20(it%20should%20have%20about%202%20inches%20below%20the%20rim),%20scrape%20the%20excess%20into%20greased%20and%20floured%20mini%20loaf%20pans.%3C/p%3E%3Cp%3EBake%20until%20a%20toothpick%20inserted%20into%20the%20center%20of%20the%20cake(s)%20comes%20out%20clean,%20about%201%20hour%20(less%20for%20mini%20loaves;%20start%20checking%20around%2020%20minutes).%20Transfer%20the%20pan%20to%20a%20wire%20rack,%20and%20let%20the%20cake%20cool%20for%2010%20minutes.%20Place%20parchment%20paper%20over%20the%20top%20of%20the%20cake%20and%20then%20turn%20it%20out%20onto%20a%20wire%20rack%20(the%20parchment%20will%20keep%20it%20from%20sinking%20into%20the%20wire%20grid%20too%20much.).%20Let%20cool%20for%20at%20least%2030%20minutes%20before%20glazing.%3C/p%3E%3Cp%3ETo%20prepare%20the%20glaze%20whisk%20together%20the%20glaze%20ingredients%20until%20smooth.%20Place%20wax%20paper%20under%20the%20cooling%20rack%20and%20quickly%20remove%20the%20parchment%20paper%20from%20under%20the%20cake**.%20Pour%20the%20glaze%20over%20the%20slightly%20warm%20(but%20not%20super%20hot)%20cake.%20Gather%20the%20glaze%20that%20has%20dripped%20onto%20the%20wax%20paper,%20slide%20fresh%20wax%20paper%20under%20the%20cake,%20and%20pour%20the%20excess%20glaze%20back%20over%20the%20cake%20again.%20Repeat%20until%20the%20glaze%20is%20not%20worth%20collecting%20anymore%20or%20until%20you%20have%20glazed%20the%20cake%20to%20your%20satisfaction.%20Let%20cool%20completely.%3C/p%3E%3Cp%3E**If%20you%20own%20a%20cake%20lifter%20it%20will%20make%20your%20life%20exponentially%20easier%20if%20you%20bake%20a%20lot%20of%20cakes!%3C/p%3E){kind=link}
