- In a large skillet, combine the fava beans, guanciale, artichokes, and onion, drizzle with the extra virgin olive oil and cook over a medium-high flame, stirring regularly, till the ingredients are softened and browned, about 10 min.
- Season with salt and pepper and add in 1/2 c. water. Continue cooking for another 5 min, then add in the sliced potatoes, adjust the seasoning, cook for an additional 2 min, and remove from the heat.
- Preheat the grill or possibly broiler. Grill each slice of bread till it is golden on both sides and top each with some of the vegetable mix. Serve while warm.
