- Heat margarine in a large skillet over medium-high heat till warm. Add in grated carrots, diced green bell pepper, and sliced mushrooms; cook for 2 min.
- Combine egg whites, Large eggs, lowfat milk, salt, and pepper in a small bowl. Reduce the heat to medium and pour the egg mix over the vegetables. Continue stirring for 1 1/2 to 2 min. Add in the rice and grated cheddar cheese; stir to mix well. Heat for 2 min.
- This recipe yields 4 servings.
