We had my 9 year olds birthday party with his friends yesterday. Nothing like letting 8 third grade boys loose in an ice cream shop. They had such a great time. They were able to make homemade ice cream, sample a few different kinds, decorate t-shirts, and have a special ice cream cake. At least the party ended at 5:00, so the sugar high had time to wear off before bed time. Eating an actual dinner, now that I can not make any promises on. If you live near a Ben & Jerry’s, I definitely suggest you check it out. Something different and fun for the kids to do. Plus, you don’t have to worry about them running crazy around your house!

If you follow along on Facebook, you may have seen that these brownie batter pancakes, were what my little guy asked for on his birthday. I originally posted this recipe over a year ago, but for some reason it just disappeared. They are definitely worth making, so I am posting it again! If you are a fan of chocolate, you have to try these! You could even dress the up a little and serve them for dessert. Top with ice cream and a little chocolate syrup….yes please!

This time I made brownie pancakes using white whole wheat flour. You know, to justify having chocolate for breakfast. My 9 year old likes his topped with diced strawberries and a little whipped cream. So whole wheat and fruit in his breakfast, these are practically health food You know who would also like these for breakfast? Mom. You should definitely plan on making these for her on Mother’s Day, after you have let her sleep in, of course. Or pretty much any other day these would be good. Trust me, chocolate is never wrong.

Brownie Batter Pancakes

Serves: 4

Prep time: 5 mins

Cook time: 10 mins

Total time: 15 mins

Nothing beats getting chocolate for breakfast. Whole wheat chocolate pancakes with chocolate chips.

Ingredients

Instructions

In a large bowl stir together flour, baking powder, salt, cocoa powder, and sugar. Add canola oil, vanilla, and milk. Stir until combined. Fold in chocolate chips.

Preheat griddle or large non-stick skillet to medium heat. Spray with non-stick spray

Using ¼ cup measuring cup, pour batter into preheated pan. Cook until the edges are starting to set, and bubbles are forming on the surface. Flip, and cook for an additional 2 minutes. Topped with whipped cream or powdered sugar to serve.
