Brown Cabbage Soup

A variation of a favorite Scandinavian soup in which the cabbage and the accompanying vegetables are caramelized in a pan prior to being added to the broth!

Ингредиенты

  • Soup bone, 3 to 4 pounds
  • Water
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 1/2 medium cabbage
  • 2 medium onions, sliced
  • 1 cup celery, chopped
  • 1 cup carrots, peeled and chopped
  • 1 cup beet greens, chopped
  • 1 tablespoon fat or cooking oil

Инструкции

  1. Cover bone with water and add salt, pepper and bay leaf. Heat to boiling and cook 1 1/2 hours.

  3. Cut cabbage into eighths and cook with remaining vegetables in fat or oil. Brown well. Add to stock and bone and continue cooking for 3/4 hour.

  5. Remove meat from bone and return it to the soup.

  7. Serve, if desired, with a dollop of sour cream.
