½ cup butter 16 ounces boneless, skinless chicken breasts, cut into strips 1 clove garlic, crushed 1 ounce sliced almonds, ½ cup chopped fresh parsley 2 Tablespoons chicken broth 1 teaspoon lemon juice ½ teaspoon salt ¼ cup grated Parmesan cheese

Melt butter in a large skillet over medium-high heat, swirling skillet until butter is browned. Add chicken, garlic, and cook 4 minutes or until chicken is done add the almonds. Stir until almonds until toasted Stir in parsley, broth and lemon juice. Sprinkle with cheese. Serve immediately 3.5.3208

I am pleased to announce that this brown butter chicken is now among the hubby’s favorite chicken dishes that I make.

I wanted to share with you that with sadness comes happiness too.

Several weeks ago, we had to put down our precious dog Kona. She was only 4 years old but was in critical condition with cancer.

The hubby and I had such huge holes in our hearts that we went out and adopted a 3 month old black lab mix from the local animal rescue.

So if you are wondering why the post is so short, it’s because I am busy being a mom to a baby pup, who is active, learning her manners and running amok.

Even though we lost our precious dog, we gained the love of adopting a new puppy for us to spread our love to and provide a forever home.

I am as happy as a lark.
