My children head back to school in little under a month. In the beginning of the summer, things were a whirl wind of fun because we had family fly in to visit. Now, it seems like the days are just passing us by, one by one. We're going through the lazy side of summer break that we experience every year, after all the traveling and visiting of friends and family are done.

The kids do their chores for the day then go outside to play, coming back inside for only snacks and lunch. When they are outside playing, I fill my time up with cleaning, recipe reading, and binge watching shows on tv that I normally can't watch with them around.

Husband Man has been on a banana kick for a few months now. He's the only one who eats them which normally means we have to figure out what to do with the ones that are super ripe. Up until recently, I've just been unwrapping them and throwing them in the freezer, however, he was quick to point out the other day that my frozen banana collection was getting a little out of hand. This left me no choice but to find a few new banana recipes to make. What are husbands for right?

We loved this recipe! This bread is wonderful for those who do not like lots of sugar. Most of the banana bread recipes I have made in the past always called for a hefty amount of white sugar. This one only calls for 3/4 cups of brown sugar and that is it. I think the amount of brown sugar in this recipe leaves the bread with a light taste, which we both loved.

I have a few more banana recipes to try so be on the lookout for those! In the meantime, enjoy the last few month of summer vacation and try this bread out ;)

Brown Butter Banana Bread

Directions:

1. Preheat oven to 350 degrees and spray a 9 inch loaf pan with non stick baking spray

2. In a medium saucepan over high heat, melt the butter. Lower the heat to medium once the butter is melted and stir until it starts to turn brown in color.

3. Remove the pan from the heat and let it cool.

4. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt until well mixed.

5. In another bowl, whisk together the eggs. Then add the bananas, vanilla extract, and cooled butter.

6. Add egg mixture to the dry ingredients until just combined.

7. Pour batter into greased loaf pan and back for 60-70 minutes, or until an inserted toothpick comes out clean.
