Ингредиенты

  • 4 x Salmon steaks, (8 ounce. each) Extra virgin olive oil
  • 1 tsp Fresh tarragon - minced Salt and pepper
  • 1 stk butter - melted
  • 3 x Egg yolks
  • 2 Tbsp. Lemon juice
  • 1 tsp Dijon mustard
  • 1 pch Cayenne pepper Salt and pepper

  1. Directions: Salmon - Brush steaks with extra virgin olive oil. Sprinkle on tarragon and season with salt and pepper. Broil salmon for about 5 min on each side. Sauce - Mix egg yolks and lemon juice. Place mix on a double boiler with simmering water and whisk till smooth for about 1 minute. Slowly add in melted butter in a slow, steady stream. Season with cayenne pepper and salt and pepper. Whisk till sauce is thick. Fold in mustard. Serve immediately with salmon steaks.
