- 1/2 c. celery, diced
- 1/2 c. carrots, diced
- 1/2 c. green pepper, diced
- 1/4 c. onion, diced
- 1 c. cauliflower
- 1 c. broccoli
- 3 chicken bouillon cubes
- 3 c. water
- 6 c. lowfat milk
- 1/2 c. butter, melted
- 1/2 c. flour
- 1 1/4 c. Velveeta cheese
- 3/4 c. American cheese

- Prepare 1/2 c. each of diced celery, carrots, and green pepper, plus 1/4 c. diced onion, 1 c. cauliflower and 1 c. broccoli. Dissolve 3 chicken bouillon cubes in 3 c. water. Cook all vegetables in this broth till tender. Add in 6 c. lowfat milk. Cream 1/2 c. melted butter and 1/2 c. flour till smooth. Add in to mix, stirring to keep smooth. Turn heat down to simmer. Add in 1 1/4 c. Velveeta cheese and 3/4 c. American cheese. Heat till melted, stirring constantly.
