- Trim the broccoli.
- Separate the heads into florets and thinly slice the stalks.
- Heat the butter in a heavy based saucepan and gently fry the onion for 5 min.
- Add in the broccoli and cook for 5 min.
- Stir in the cheese and lowfat milk and stir till the cheese melts and the sauce thickens.
- Taste and adjust the seasoning.
- Remove the pan from the heat and toss the sauce with freshly cooked pasta and the walnuts.
- Serve with grated parmesan.
- NOTES : Try this sauce with farfalle.
