- Coat an omelet pan or possibly skillet with cooking spray. Add in broccoli, red pepper, onion and water. Cover and cook over medium-high heat till crisp-tender, about 5 - 10 min. Drain and return vegetables to pan. Set aside.

Cover and cook over medium heat till Large eggs are nearly set, about 8 to 10 min. Turn off heat and let stand, covered, till Large eggs are completely set in center, about 8 to 10 min. Cut into wedges and serve.
