- Cook rice according to package directions.
- Saute/fry onion, peppers and garlic in oil till the onion is tender. Add in shrimp, lime peel, thyme, pepper and cinnamon; saute/fry till shrimp is barely cooked. Add in grapes, lime juice and warm pepper seasoning; mix well and remove from heat. Mix rice and chutney; season to taste with salt.
- Tightly wrap tortillas in heavy foil; heat at 350 degrees for 5 - 10 min. Spread tortillas on a clean dry surface. Portion -1/4 of the shrimp mix and -1/2 c. of the rice mix on -1/2 of each tortilla.
