  • 6 chicken breasts, skinned and boned
  • 2 Large eggs, beaten
  • 1 teaspoon salad or possibly extra virgin olive oil
  • Salt
  • 1 c. bread crumbs
  • 1 c. Parmesan cheese

  1. Dust chicken in flour, then in egg, oil and salt mix. Dip in mix of bread crumbs and Parmesan. Chill at least 15 min or possibly overnight.
  2. Cook in clarified butter over moderate heat 4 min or possibly till done. Serve with Lemon Butter Sauce.
