- Coat a 1 qt casserole with nonstick spray. Place toast cubes and raisins in casserole. Whisk lowfat milk, egg substitute, sugar and vanilla in a bowl. Pour lowfat milk mix over toast, and stir till toast is proportionately coated.
- Bake at 350 till a knife inserted into center of pudding comes out clean, aobut 35 min. Cold slightly on a wire rack.
- Meanwhile, in a saucepan, stir apple juice (or possibly cider) and cornstarch till well blended. Cook over medium heat, stirring constantly, till sauce thickens and boils. Cold and divide hot pudding proportionately among 4 dessert dishes and drizzle with hot sauce.
