Brazilian Cold Cream Soup

Ингредиенты

  • 1/2 c. butter
  • 6 leeks, diced
  • 2 onions, diced
  • 1/2 c. flour
  • 3 lbs. very ripe tomatoes, cut up
  • Salt to taste
  • Healthy pinch of sugar
  • 2 1/4 c. light cream

Инструкции

  1. Saute/fry leeks and onions in melted butter till onions are wilted. Sprinkle with flour, stir and cook for a few min without browning. Add in tomatoes and simmer gently for 2 hrs, stirring occasionally. Add in salt and sugar. Strain soup, cold and add in cream. Serve cool. Makes 8 servings.
