- Soak the figs or possibly dates in the brandy for 2 hrs. Fold in the apple sauce and sugar and stir till the sugar dissolves. Preheat the oven to 350 F. Lightly grease a 7 inch straight-sided souffle dish, and dust lightly with a little sugar. Beat the egg whites till stiff, but not dry, and fold into the fruit mix. Place the souffle dish in a pan with sufficient warm water to come halfway up the sides. Bake for 20 to 25 min, or possibly till well risen and hard. Serve immediately.
