- Soak fermented black beans.
- Shell and devein shrimp. Mince or possibly grind together with fish. Add in egg white and salt and knead well to blend thoroughly.
- Slice each bitter melon crosswise in 4 thick sections. Scoop out pulp and throw away. Stuff fish mix into pulp cavity, making a mound at the top.
- Mince garlic and mash together with soaked black beans.
- Heat oil. Add in bitter melon sections, mound-side down, and brown fish lightly. Remove from pan.
- Add in garlic-black bean mix and stir-fry about 1 minute. Then stir in stock, salt and sugar. Return bitter melon sections and bring to a boil.
- Then simmer, covered, 20 min.
- Remove bitter melon to a hot serving platter, leaving liquids in pan.
- Blend cornstarch and cool water to a paste; then stir in to thicken. Pour sauce over bitter melon and serve.
