- Set aside 20 of the best boysenberries for garnish.
- Place boysenberries, water and sugar in a saucepan, cook till they are soft then puree. Allow to cold.
- Whip cream and fold into custard with boysenberry puree. Ladle into serving glasses and chill.
- To serve, decorate with a rosette of whipped cream and garnish with reserved boysenberries and a sprig of mint.
