- Preheat oven to 350F.
- Butter and lightly flour two 8" round cake pans.
- Cream the butter till softened and slowly add in the sugar, beating till light. Add in the egg yolks and vanilla and beat to blend well.
- Sift the flour, baking pwdr, and salt onto a piece of waxed paper.
- Alternately blend the dry ingredients and the lowfat milk into the butter mix in three stages. Beat till smooth.
- In a separate bowl, beat the egg whites till stiff but not dry.
- Stir a third of the whites into the cake batter and gently mix in the remaining. Spoon into cake pans.
- Bake for 30-35 min, or possibly till a straw inserted in the center ofthe cake comes out dry. Cold in pans for 5 min before turning out onto racks.
