- Wash the pata well and scrape the skin with a knife (best to get a cleaned pieces at the butcher's)
- Place in a pressure cooker and cover with water.
- Add the ginger, onion, peppercorns and salt.
- Let it boil for 45 minutes or until very tender.
- Remove all the scum from the pressure cooker and let it boil again without the cover.
- Add the potatoes, green beans and squash; simmer for about 10 minutes or until fork tender.
- Add the leafy vegetables, simmer for a few minutes and remove from heat.
- Transfer to a serving bowl and enjoy with steamed rice.
