- Grease 6-c. souffle dish and sprinkle with about 1 Tbsp. Swiss cheese. Finely grind 2 tsp. minced almonds and dust bottom and sides of souffle dish.
- Heat 1 Tbsp. butter in saucepan over medium heat. Saute/fry shallot 1 minute. Stir in spinach and 1/4 tsp. salt. Cook 5 min, then transfer mix to plate. Set aside.
- Heat 3 Tbsp. butter in same saucepan. Stir in flour till well blended. Remove from heat. Add in boiling lowfat milk and beat with wire whisk till smooth. Beat in 1/2 tsp. salt, black pepper, dash cayenne pepper and dash nutmeg. Return to heat and cook over medium-low heat till very thick, about 1 minute, stirring constantly. Remove from heat.
- Add in egg yolks, 1 at a time, to warm mix, beating till smooth. Stir in spinach and remaining almonds. Adjust seasoning. Beat egg whites with dash salt till soft peaks form. Fold 1/4 egg whites into sauce. Stir in all but 1 Tbsp. remaining grated cheese. Gently mix in remaining egg whites.
- Pour into prepared souffle dish. Sprinkle with remaining cheese and bake at 375 degrees till golden and puffed, 30 min.
- This recipe yields 4 to 6 servings.
