There was a time that when I only ate oatmeal in the winter. That is until I discovered overnight oatmeal. Now, I make up a few of jars early in the week and keep them in the fridge for quick and easy breakfasts. I enjoy overnight oatmeal cold, but you can easily heat it up if you like it hot. Mixing the oatmeal ingredients in mason jars makes is super easy for mixing and it makes it easy for transporting and heating.
TIP: I’ve recently discovered that when you use Bob’s Red Mill Quick Cooking Oats, there is no need to wait over night for these yummy oats. Mix it up and let it sit for 15 to 20 minutes and it’s ready to eat!
Since blueberries and peaches are in full season, this one has been my favorite for the past few weeks.
Blueberry and Peach Overnight Oatmeal
Ingredients
- 1/4 cup oats
- 1/2 cup of filtered water
- 1 tablespoon chia seeds
- 1 tablespoon almond butter
- 1/4 cup or a handful of blueberries
- 1 medium peach peeled and chopped
Instructions
place ingredients in a one pint mason jar shake well
place in refrigerator over night or set aside for 15 minutes if using quick cooking oats
add some nuts and a little bit of milk if desired
