This Blue Cheese Steak Sauce is seriously delicious and pairs well with your favorite cut of beef.

Sometimes it’s just no fun living with someone who is just not adventurous in the kitchen. But on those days that I just want steak, I know my kitchen will be considered the happiest place on earth.

We are the perfect pair, really. My blue cheese sauce and his steak. It just doesn’t get any better than that.

I mean how wonderful is it that I had the opportunity to become acquainted with a new sauce and he got his steak.

It’s my way of making those around me feel loved. His favorite and my science projects.

I guess what it all boils down to is that it truly doesn’t get any better than that now does it?

No matter what I decide to create, it’s the anticipation of the smiles on everyone’s face that makes it all worth it.

4 Tablespoons unsalted butter 1 shallot, finely diced 4 Tablespoons dry white wine 1 Tablespoon Brandy 2 Tablespoons Beef Stock ½ cup heavy cream 3.5 ounces Blue Cheese

In a small sauce pan, heat to medium. Add half of the butter to the pan and melt. Add the shallots and saute for about 5 minutes, until softened. Add the wine and brandy, and bring to a boil. Add the stock and cook until reduced by half. Add the cream, mix well and reduce heat to a simmer. Cook for 5 minutes, then whisk in the remaining butter and the blue cheese. Remove from the heat. You can strain it for a smooth sauce of serve it as is over your favorite cut of steak. 3.2.2925
