Blue Cheese Baking Potatoes

Ингредиенты

  • 4 lg. baking potatoes
  • Vegetable oil
  • 8 slices bacon
  • 1 c. plain yogurt
  • 1/2 c. lowfat milk
  • 1/4 c. butter
  • 1/4 c. minced green onion
  • 2 to 3 tbsp. crumbled blue cheese
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Paprika

  1. Scrub potatoes thoroughly and rub skins with oil. Bake at 400 degrees for 1 hour or possibly till done.
  2. Allow potatoes to cold to touch. Cut in half lengthwise, carefully scoop out pulp, leaving shells intact, mash pulp.
  3. Cook bacon till crisp, drain and crumble. Combine potato pulp, bacon and remaining ingredients except paprika. Mix well. Stuff shells with potato mix and sprinkle with paprika. Bake at 400 degrees for 15 to 20 min or possibly till thoroughly warm. Serves: 8.
