- In food processor, place cream cheese, ricotta, egg, sugar, and almond extract; blend till smooth.
- Mound or possibly pipe 2 heaping Tbsp. cheese mix down center of crepe. Fold sides around filling and place in 9- by 13-inch greased pan. Brush tops with melted butter.
- Bake in preheated 400 degree oven for about 10 min.
- Fruit topping: Mix together orange juice and cornstarch in small bowl then place in saucepan; add in fruit.
- Heat over medium heat till mix thickens and bubbles; stirring constantly. Serve over hot crepes.
- This recipe yields 4 servings.
