- In the container of a blender put egg yolks, lemon juice, 1/4 tsp. salt and cayenne pepper.
- Heat butter till warm and bubbly, but not brown.
- Blend egg yolk mix on low for 3 seconds.
- Raise speed to high and carefully remove blender cover. With blender still running, pour warm butter in slowly, in a steady stream. Continue blending for 5 more seconds. Transfer to serving bowl and serve.
