Curry goes so good with so many different foods. I happened on to this recipe a while back as a side dish for a Jamaican jerk dinner.

There is an assumption that jerk recipes are spicy. They may have some spice but the spice is flavor when done correctly. The curry acts as a compliment to the spice but stands on its own as it does here. I used 2 curry mixes in this recipe. I am trying to use up my store bought combined spices because they can be easily made from scratch.

My Black Eyed Peas & Hominy Curry is tasty, healthy and vegan. This dish can be served as either a side dish or a main course. It is both hearty and light, not filling. I also really like that the dish is so colorful. You know they say we eat with our eyes, and this dish has such a unique color. For the record, I served my recipe with jerk chicken, so it was a side dish.

Black Eyed Pea & Hominy Curry

Creating a deep, spicy, colorful and flavorful curry that could be a dinner or a side with my Black Eyed Pea & Hominy Curry.

Instructions

Begin by heating the oil in a pot. Once hot, add in the onions and cook for 4 – 5 minutes until softened. Next, add in all the spices. Mix well and cook for 1 minute. Add in all the remaining vegetables. Mix well and cook for 2 minutes. Add the garlic and cook for another minute. Now add in the black eyed peas and the hominy. Mix well, cook for 2 minutes. Add in the cilantro and cook for 1 minute. Finish by adding in the coconut milk. Simmer for 10 minutes.

Check for spice level as well as the sauciness. Do you need a little more coconut milk?
