Ингредиенты

  • 1 lb white onions, minced
  • 1 bn green onions, minced
  • 1 x green pepper, minced
  • 2 x cloves garlic, chopped
  • 1/2 c. parsley, minced
  • 1 1/2 lb salt pork, boiled once, cut into small pcs
  • 1 1/2 lb warm smoked sausage, cut into 1/2in pcs
  • 1/2 lb dry blackeyed peas, boiled till half done
  • 6 c. water
  • 1 1/2 lb rice

Инструкции

  1. Saute/fry onions, pepper, garlic, and parsley in Dutch oven with 2 tbs extra virgin olive oil. Add in salt meat, sausage, black-eyed peas, and rice. Add in water and bring to boil. Mix well, cover, and reduce heat to low. 0Cook 45 min. Remove cover 5-10 min before serving.
