,%20and%20Eric%20Skokan,%20the%20owner%20of%20Black%20Cat%20Farm%20and%20Black%20Cat%20Farm%20Table%20Bistro.%3C/p%3E%3Cp%3EToday,%20Episode%202%20is%20available%20for%20viewing%20(above).%3C/p%3E%3Cp%3EFilmed%20again%20on%20Black%20Cat%20Farm,%20we%20followed%20Eric%20into%20his%20root%20cellar,%20a%20dugout%20with%20stairs%20leading%206%20feet%20down%20into%20a%20small,%20damp%20room%20that%20maintains%20a%20temperature%20of%20around%2040-degrees%20Fahrenheit.%3C/p%3E%3Cp%3EThe%20dug%20out,%20which%20reminded%20me%20of%20a%20very%20snug%20wine%20cellar,%20is%20a%20recent%20addition%20to%20the%20farm.%20Built%20in%20the%20fall%20of%202009,%20it%20has%20yet%20to%20stand%20the%20test%20of%20a%20hot,%20dry%20Colorado%20summer.%3C/p%3E%3Cp%3EIt%20did%20do%20its%20job%20over%20a%20very%20long%20and%20cold%20winter,%20successfully%20storing%20and%20maintaining%20around%2010,000%20pounds%20of%20vegetables!%3C/p%3E%3Cp%3EMost%20of%20the%20veggies%20stored%20appeared%20on%20the%20Black%20Cat%20Bistro's%20fall%20and%20winter%20menus,%20but%20at%20the%20time%20of%20filming,%20about%20600%20pounds%20of%20root%20vegetables%20were%20still%20in%20the%3C/p%3E%3Cp%3Ecellar.%3C/p%3E%3Cp%3EAs%20you%20can%20see%20in%20the%20pic%20to%20left,%20and%20in%20the%20video%20above,%20tubs%20of%20gnarly%20parsnips%20line%20the%20side%20of%20the%20cellar,%20as%20do%20turnips,%20and%20parsley%20root,%20a%20conical-shaped%20veggie%20that%20tastes%20like%20carrot%20and%20has%20a%20green-leaf%20top%20like%20flat-leaf%20parsley.%3C/p%3E%3Cp%3EEric%20cooks%20and%20purees%20parsley%20root,%20using%20it%20as%20a%20bed%20for%20meat%20dishes,%20with%20the%20green%20tips%20as%20a%20parsley%20salad%20accompaniment.%3C/p%3E%3Cp%3ENext%20to%20the%20root%20cellar%20is%20a%20hoop-house,%20a%20temporary%20hot-house%20that%20can%20be%20moved.%20Should%20there%20be%20an%20infestation%20of%20disease,%20on%20an%20organic%20farm%20like%20Black%20Cat,%20the%20structure%20can%20be%20relocated,%20leaving%20the%20disease%20behind.%3C/p%3E%3Cp%3EStarting%20afresh%20on%20a%20clean%20patch%20of%20earth%20means%20chemicals%20are%20not%20necessary,%20the%20use%20of%20which%20would%20render%20the%20growing%20process%20of%20hot-house%20vegetables%20non-organic.%20A%20temporary%20hoop-%20house,%20versus%20a%20fixed,%20greenhouse%20structure,%20is%20one%20of%20the%20conscious%20choices%20Eric%20makes%20as%20an%20organic,%20farm%20to%20table%20chef.%3C/p%3E%3Cp%3EUnlike%20the%20damp,%20near-freezing%20temperature%20of%20the%20cellar,%20the%20hoop-house%20was%20steamy%20warm%20and%20filled%20with%20the%20gentle%20aroma%20of%20moist%20dirt,%20and%20in%20that%20dirt%20there%20were%20lots%20of%20veggies%20starters%20and%20more%20young%20salad%20greens.%3C/p%3E%3Cp%3EEric's%20intention%20with%20the%20farm%20is%20to%20make%20sure%20his%20bistro%20menu%20showcases%20the%20myriad%20of%20produce%20grown%20on%20the%20farm,%20with%20a%20fun%20selection%20of%20seasonal%20vegetables%20appearing%20on%20plate%20as%20cooked,%20pureed,%20and%20or%20roasted%20in%20combination%20with%20raw,%20crunchy,%20leafy%20salads%20--%20something%20I%20tried%20to%20achieve%20with%20my%20last%20Meatless%20Monday%20post.%3C/p%3E%3Cp%3EBecause%20the%20Black%20Cat%20Bistro%20menu%20is%20truly%20seasonal,%20the%20challenge%20on%20the%20Farm%20is%20to%20plant%20variety%20so%20that%20say,%20carrots%20aren't%20the%20signature%20vegetable%20over%20winter,%20and%20red%20lettuce%20isn't%20the%20summer%20salad%20ingredient.%3C/p%3E%3Cp%3ETo%20counteract%20the%20potential%20for%20a%20repetitious%20menu,%20Eric%20grows%20around%20200%20varieties%20of%20vegetables%20and%20fruits%20on%2010%20acres!%20And%20one%20of%20his%20personal%20favorites%20is%20asparagus.%3C/p%3E%3Cp%3EWe%20end%20Episode%202%20up%20close%20and%20personal%20with%20several%20spears%20just%20starting%20to%20appear%20above%20ground.%20Eric%20shared%20details%20of%20a%20dish%20he%20intends%20preparing%20with%20asparagus%20and%20local%20morel%20mushrooms.%3C/p%3E%3Cp%3EEpisode%203,%20which%20I'll%20upload%20in%20the%20next%20few%20weeks,%20begins%20with%20a%20discussion%20over%20the%20now%20fully-grown%20asparagus%20and%20a%20sampling%20of%20both%20green%20and%20white%20varietals.%20I%20was%20absolutely%20blown%20away%20by%20the%20tenderness%20and%20sweetness%20of%20the%20raw%20spears,%20but%20more%20on%20that%20in%20episode%203!%3C/p%3E){kind=link}
