- Preheat oven to 350F and line two baking sheets with parchment paper
- In a small saucepan over low heat melt bittersweet chocolate and butter
- Transfer to large mixing bowl and let cool for 10min
- Combine flour, cocoa, and baking powder in a sepreate bowl and set aside
- Once butter mixture is slightly cooled whisk in eggs, then add brown sugar and mix again until well combined
- Stir in flour mixture with a wooden spoon until well combined (mixture will be thick)
- Using 1 tbsp, scoop dough into balls onto prepared cookie sheet and place in fridge (if you don't want cookies to spread much during baking), meanwhile make the cream cheese filling:
- With an electric mixture, beat cream cheese, sugar, egg, and vanilla until mixture is smooth and creamy. Then stir in semi-sweet chocolate chips
- Remove dough from fridge and make a well in each dough ball (I used a toothpick and it worked well), then spoon 1 tsp of cream cheese batter into the well (It is okay if batter spills over the sides)
- Bake cookies for 8 to 10min until cookie feels just dry to touch, let cool on sheet for 5min then remove to cooling rack and enjoy!
