Black Bottom Cupcake Cookies

  • 4 oz bittersweet chocolate
  • 1 stick unsalted butter
  • 3 large eggs, slightly beaten
  • 1/2 Cup brown sugar
  • 1 Cup all purpose flour
  • 3/4 Cup unsweeetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • Cream Cheese filling:
  • 8 oz cream cheese, room temperature
  • 1/2 Cup granulated white sugar
  • 1 large egg
  • 1/2 tsp vanilla
  • 1/4 Cup semi-sweet chocolate chips

  1. Preheat oven to 350F and line two baking sheets with parchment paper
  2. In a small saucepan over low heat melt bittersweet chocolate and butter
  3. Transfer to large mixing bowl and let cool for 10min
  4. Combine flour, cocoa, and baking powder in a sepreate bowl and set aside
  5. Once butter mixture is slightly cooled whisk in eggs, then add brown sugar and mix again until well combined
  6. Stir in flour mixture with a wooden spoon until well combined (mixture will be thick)
  7. Using 1 tbsp, scoop dough into balls onto prepared cookie sheet and place in fridge (if you don't want cookies to spread much during baking), meanwhile make the cream cheese filling:
  8. With an electric mixture, beat cream cheese, sugar, egg, and vanilla until mixture is smooth and creamy. Then stir in semi-sweet chocolate chips
  9. Remove dough from fridge and make a well in each dough ball (I used a toothpick and it worked well), then spoon 1 tsp of cream cheese batter into the well (It is okay if batter spills over the sides)
  10. Bake cookies for 8 to 10min until cookie feels just dry to touch, let cool on sheet for 5min then remove to cooling rack and enjoy!
