Black Bean Soup
I have never been a fan of black bean soup—until now and until this recipe, which is so easy, that if you love black bean soup, you can make this on a moment’s notice (if you have the ingredients on hand)…
Black Bean Soup
INGREDIENTS:
- 6 slices bacon, chopped
- 1 cup onions-chopped
- 2 cloves garlic, minced
- 2 (15 ounce) cans black beans, drained
- 1 1/2 cups chicken broth
- 3 tablespoons tomato paste
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon salt
DIRECTIONS:
In a large Dutch oven, cook bacon over medium heat until crisp. Add onion and garlic to bacon drippings in pan; cook, stirring occasionally for 5 to 6 minutes or until onion is tender.
Add beans, chicken broth, tomato paste, ground red pepper and salt. Bring to a boil over medium-high heat; reduce heat and simmer for 20 minutes.
Using an immersion blender, blend the soup in the pot* until smooth. Garnish with sour cream and cheddar cheese.
*You can use a blender or food processor if you don’t have an immersion blender.
