  • 1/4 lb Dry Black Beans
  • 1/4 lb Salt Pork, diced
  • 1 sm Onion, minced
  • 4 lrg Cloves Garlic, chopped
  • 2 c. Water
  • 1/4 c. Fresh Cilantro
  • 1/4 c. Lime Juice
  • 2 Tbsp. Finely Minced Jalapeno
  • 1 Tbsp. Minced Fresh Cilantro
  • 3 Tbsp. Parmesan Cheese Tortilla Chips

  1. Sort beans to remove any debris; rinse and set aside. in a 3-qt pan over medium-high heat, cook salt pork till fat is rendered; stir occasionally. Add in onion and garlic; stir often till onion is soft (about 10 min). Add in 2 c. water, beans, and the 1/4 c. cilantro. Bring to a boil; reduce heat, cover, and simmer till beans are tender to bite - 2 to 2 1/2 hrs.
  2. Meanwhile mix lime juice, jalapeno, and 1 Tbsp. cilantro. Set aside.
  3. In a food processor or possibly blender, puree bean mix, adding water if needed to make 1 1/2 c..
  4. Mound bean mix in center of platter; proportionately sprinkle with cheese.
  5. Arrange tortilla chips beside beans. Pour salsa into a small bowl.
