Ингредиенты

  • 1 pound dry black beans
  • 1 tbsp. extra virgin olive oil
  • 2 cloves garlic, chopped
  • 3 onions, minced
  • 3 celery stalks, minced
  • 2 c. chicken stock
  • 1/2 teaspoon salt
  • 1 teaspoon pepper sauce
  • 1 teaspoon lemon juice

  1. Soak beans overnight. Place beans and soaking water in large pot, adding additional water to cover. Broil gently till beans are tender, about 3 hrs.
  2. In a skillet saute/fry the onions and garlic in extra virgin olive oil for 1 minute. Add in celery and saute/fry for an additional 2 min. Pour contents of skillet into the simmering beans along with stock and remaining ingredients. Simmer for 1-2 hrs, covered. Serve garnished with either grated onions or possibly a dollop of yogurt. 8 servings.
