%20and%20picked%20out%20a%20couple%20of%20his%20books%20to%20use%20for%20reference.%3C/p%3E%3Cp%3EMy%20first%20selection%20was%20Bittman's%20How%20To%20Cook%20Everything,%20and%20let%20me%20tell%20you%20something....I%20may%20never%20need%20another%20cookbook.%3C/p%3E%3Cp%3EOkay,%20so%20that's%20a%20little%20unrealistic.%3C/p%3E%3Cp%3EBut%20really,%20I%20didn't%20even%20make%20it%20through%20the%20appetizers%20and%20salad%20sections%20when%20I%20had%20to%20close%20the%20book.%20Because%20I%20wanted%20to%20make....EVERYTHING.%20Practically%20every%20single%20entry%20sounded%20good%20to%20me.%20How%20To%20Cook%20Everything%20is%20less%20a%20cookbook%20and%20more%20an%20instruction%20manual.%20The%20recipes%20are%20so%20simple%20that%20you%20feel%20more%20like%20you%20are%20dressing%20the%20plate%20instead%20of%20cooking%20a%20meal.%20The%20methods%20are%20so%20basic%20and%20clear%20that%20I%20would%20recommend%20this%20book%20to%20even%20the%20most%20freshman%20cook.%20Although%20the%20book%20is%20intimidating%20at%20first%20glance%20(ie,%20its%20bigger%20than%20my%20family%20bible),%20it%20only%20takes%20a%20few%20pages%20for%20you%20to%20realize%20that%20it%20is%20anything%20but.%3C/p%3E%3Cp%3E*stepping%20down%20off%20the%20soapbox*%3C/p%3E%3Cp%3EOkay,%20so%20lets%20get%20back%20to%20the%20food!%20Our%20first%20week's%20theme%20is%20%22Bites%20of%20Bittman%22,%20meaning%20any%20small%20plate%20or%20starter.%20As%20Bittman%20indicates%20in%20the%20introduction%20to%20the%20appetizer%20section,%20most%20of%20the%20dishes%20in%20the%20book%20can%20be%20prepared%20as%20a%20starter,%20and,%20in%20fact,%20pasta%20is%20generally%20served%20as%20a%20first%20course%20in%20Italy%20(that's%20a%20man%20after%20my%20own%20heart).%20While%20I%20had%20a%20difficult%20time%20choosing%20a%20recipe%20to%20start%20with,%20I%20decided%20to%20go%20with%20this%20one%20simply%20because%20scallops%20are%20quite%20possibly%20my%20all%20time%20favorite%20seafood.%20Oh,%20that%20and%20I%20had%20a%20bag%20of%20sea%20scallops%20in%20the%20freezer.%3C/p%3E%3Cp%3EWarm%20Salad%20of%20Scallops%20and%20Tender%20Greens%3C/p%3E%3Cp%3Emakes%204%20servings%3C/p%3E%3Cp%3E1.%20Whisk%20together%20the%20lemon%20juice,%201%201/2%20tablespoons%20of%20the%20oil,%20the%20shallot%20and%20the%201%20tablespoon%20of%20water%20in%20a%20small%20bowl.%20Season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3E2.%20Heat%20the%20remaining%20oil%20in%20a%20large,%20non-stick%20skillet%20over%20high%20heat.%20Add%20the%20scallops%20and%20sear%20until%20golden,%202-3%20minutes%20per%20side.%3C/p%3E%3Cp%3E3.%20Toss%20the%20greens%20with%20half%20of%20the%20dressing%20in%20a%20large%20bowl.%20Divide%20the%20salad%20among%20four%20plates,%20arrange%20the%20scallops%20over%20the%20salad,%20and%20drizzle%20the%20remaining%20dressing%20over%20them.%20Serve%20immediately.%3C/p%3E%3Cp%3ENotes:%20For%20my%20purposes,%20I%20made%20less%20than%20half%20the%20recipe,%20since%20I%20would%20be%20the%20only%20one%20eating%20it%20last%20night.%20I%20do%20love%20me%20some%20scallops,%20and%20even%20though%20the%20recipe%20doesn't%20say%20anything%20about%20seasoning%20the%20scallops%20themselves,%20I%20couldn't%20keep%20myself%20from%20adding%20a%20little%20salt%20and%20pepper%20before%20searing%20them.%20I%20loved%20that%20the%20scallops%20straight%20out%20of%20the%20pan%20had%20a%20slight%20wilting%20effect%20on%20the%20greens%20and%20warmed%20the%20dressing%20somewhat.%20The%20flavors%20were%20complementary,%20subtle,%20and....kinda%20boring.%20Yes,%20I%20said%20it.%20Don't%20get%20me%20wrong,%20it%20was%20a%20very%20good%20salad.%20All%20I'm%20saying%20is%20that%20next%20time,%20I'll%20add%20some%20sesame%20oil%20or%20some%20red%20pepper,%20or%20some%20fresh%20herbs,%20or,%20well,%20SOMETHING%20to%20the%20dish%20to%20make%20it%20pop%20a%20little%20more.%20Definitely%20a%20salad%20I%20would%20eat%20again,%20with%20minor%20modifications.%20(and%20yes,%20if%20you%20were%20wondering,%20I%20did%20clean%20my%20plate.)%3C/p%3E){kind=link}
