This month, as an Allrecipe Allstar, I was given the opportunity to expand my palate and experience one of the best healthy animal protein options out there today...bison. I fully admit, my experience with bison has been very limited. Bison do not roam the prairies of Ohio...(wait, there are no prairies in Ohio!) %20%20I%20remember%20having%20a%20bison%20burger%20one%20time%20in%20a%20local%20restaurant%20years%20ago.%20%20I%20remember%20it%20being%20good...but%20that's%20where%20my%20bison%20story%20ends.%3C/p%3E%3Cp%3EI%20was%20very%20excited%20to%20be%20a%20part%20of%20this%20campaign%20with%20The%20Bison%20Council%20and%20Allrecipes.%20So%20I%20began%20my%20adventures%20with%20bison%20by%20going%20onto%20The%20Bison%20Council's%20website%20and%20educating%20myself%20a%20bit%20on%20the%20wonders%20of%20bison.%20%20The%20Bison%20Council's%20website%20is%20great%20resource%20for%20all%20things%20bison.%3C/p%3E%3Cp%3EHere's%20what%20I%20learned...%3C/p%3E%3Cp%3EDid%20you%20know,%20bison%20is%20the%20better%20choice%20when%20it%20comes%20to%20meat?%20%20You%20get%20all%20the%20flavor%20of%20a%20red%20meat%20without%20all%20the%20fat%20and%20cholesterol.%20%20It's%20lower%20in%20cholesterol%20than%20even%20chicken!%20%20Check%20out%20the%20chart%20below:%3C/p%3E%3Cp%3E(graphic%20courtesy%20of%20The%20Bison%20Council)%3C/p%3E%3Cp%3EAccording%20to%20The%20Bison%20Council,%20bison%20steaks%20should%20be%20cooked%20at%20a%20lower%20temperature%20than%20beef%20steaks%20and%20served%20medium%20rare.%20%20Over%20cooking%20should%20be%20avoided%20because%20of%20the%20lower%20fat%20content.%20It%20can%20cause%20the%20meat%20to%20become%20tough%20and%20the%20high%20iron%20content%20to%20deplete.%20%20Equipped%20with%20all%20this%20newly%20learned%20information%20I%20was%20ready%20to%20get%20cooking!%3C/p%3E%3Cp%3EEarly%20in%20the%20assignment%20we%20were%20given%20a%20list%20of%20recipes%20to%20choose%20from%20using%20bison.%20%20I%20chose%20the%20Sizzling%20Bison%20Stir%20Fry%20recipe%20because%20it%20used%20a%20cut%20of%20bison%20I%20had%20never%20tried%20(rib%20eye)%20and%20my%20family%20loves%20a%20good%20stir%20fry.%3C/p%3E%3Cp%3EWhen%20my%20package%20arrived%20from%20High%20Plains%20Bison%20(the%20company%20supplying%20the%20bison%20for%20this%20assignment)%20I%20was%20really%20excited.%20%20I%20had%20no%20idea%20what%20the%20bison%20steaks%20would%20look%20like,%20let%20alone%20taste%20like.%20(I%20only%20wish%20now%20that%20I%20had%20gotten%20a%20shot%20of%20the%20raw%20vacuum%20packaged%20steaks!)%20%20Inside%20the%20box%20were%20%204-9%20oz.%20rib%20eye%20steaks!%20%20They%20looked%20very%20comparable%20to%20beef%20rib%20eye%20steaks,%20but%20darker%20in%20color%20and%20with%20less%20marbling.%3C/p%3E%3Cp%3EI%20have%20to%20admit,%20I%20was%20a%20bit%20skeptical%20using%20rib%20eye%20in%20a%20stir%20fry.%20%20I%20was%20even%20more%20skeptical%20once%20I%20read%20that%20because%20of%20the%20lower%20fat%20content%20in%20bison,%20it%20should%20be%20cooked%20at%20a%20lower%20temperature%20than%20other%20animal%20proteins%20and%20the%20steaks%20should%20be%20served%20med/rare%20for%20best%20flavor.%20%20Traditionally,%20a%20stir%20fry%20is%20made%20using%20high%20heat,%20to%20sear%20the%20meat%20and%20vegetables%20quickly.%20%20The%20directions%20for%20this%20stir%20fry%20recipe%20did,%20indeed,%20instruct%20you%20to%20cook%20it%20on%20med/high%20to%20high%20heat,%20so%20although%20it%20is%20NOT%20what%20is%20recommended%20for%20bison%20steaks,%20I%20did%20as%20the%20recipe%20said.%3C/p%3E%3Cp%3EThe%20Sizzling%20Bison%20Stir%20Fry%20recipe%20for%20me,%20was%20just%20ok.%20%20At%20first%20taste,%20I%20enjoyed%20it,%20but%20by%20the%20end%20of%20the%20meal%20there%20were%20a%20few%20negatives.%20The%20positives%20were%20the%20sauce%20had%20good%20flavor,%20the%20meal%20was%20very%20quick%20to%20put%20together,%20and%20there%20is%20just%20no%20denying%20the%20health%20benefits%20of%20bison.%20The%20negatives%20in%20this%20recipe%20were%20the%20bison%20ended%20up%20a%20little%20chewy%20and%20with%20a%20slightly%20off%20flavor.%20I%20can't%20say%20whether%20it%20was%20the%20sauce%20or%20the%20cooking%20method%20that%20is%20to%20blame.%3C/p%3E%3Cp%3EI%20was%20a%20bit%20disappointed...%3C/p%3E%3Cp%3Eall%20of%20the%20other%20Allstars%20were%20raving%20about%20how%20delicious%20their%20bison%20was!%20%20:(%3C/p%3E%3Cp%3EBut%20thankfully,%20I%20had%20two%20more%20steaks%20to%20prepare%20any%20way%20I%20chose.%20(thank%20you%20Bison%20Council%20for%20your%20generosity!)%20I%20don't%20know%20about%20you,%20but%20the%20only%20way%20I%20like%20to%20enjoy%20a%20rib%20eye%20is%20grilled.%20%20%20I%20searched%20The%20Bison%20Council's%20site%20for%20a%20recipe,%20and%20ended%20up%20making%20a%20very%20simple,%20but%20very%20delicious%20one...Char-grilled%20Bison%20Ribeye%20Steak%20with%20Creamed%20Corn%20and%20Spinach.%3C/p%3E%3Cp%3EI%20cooked%20the%20steaks%20to%20rare-med/rare%20(120%20degrees%20F%20on%20my%20instant%20read%20meat%20thermometer)%20on%20bit%20lower%20temperature%20than%20I%20would%20normally%20cook%20beef%20steaks%20on,%20then%20let%20them%20rest%20for%2010%20minutes%20loosely%20covered%20with%20foil.%3C/p%3E%3Cp%3EFINALLY!%20%20I%20could%20see%20what%20everyone%20was%20raving%20about!%20%20THIS%20was%20obviously%20the%20way%20to%20prepare%20bison%20ribeye%20steak%20because%20it%20was%20DELICIOUS.%20It%20was%20tender,%20and%20juicy,%20and%20flavorful.%20%20I%20had%20only%20planned%20on%20eating%20half%20a%20steak,%20but%20it%20was%20so%20good,%20I%20ended%20up%20eating%20the%20entire%20thing...guilt%20free%20because%20of%20the%20lower%20fat%20and%20calorie%20content%20of%20bison!%20%20I%20honestly%20COULD%20NOT%20TELL%20the%20difference%20between%20this%20steak%20and%20a%20beef%20steak.%20%20In%20fact,%20side%20by%20side,%20I%20would%20choose%20the%20bison%20steak%20prepared%20this%20way%20over%20the%20beef%20for%20taste%20and%20nutrition.%3C/p%3E%3Cp%3EI%20wish%20my%20photos%20were%20better%20quality.%20%20Truth%20is,%20after%20I%20tasted%20the%20first%20slice%20of%20this%20steak,%20all%20I%20wanted%20to%20do%20was%20sit%20down%20and%20eat%20it.%20%20So%20I%20didn't%20have%20the%20patience%20to%20play%20around%20with%20lighting%20and%20the%20camera!%20%20(and%20for%20the%20record,%20I'm%20not%20ever%20really%20happy%20about%20less%20natural%20light,%20thanks%20to%20the%20changing%20seasons,%20to%20take%20pictures%20in!)%3C/p%3E%3Cp%3ESo%20ends,%20this%20exciting%20(for%20me%20anyway!)%20adventure%20with%20bison%20rib%20eye%20steaks.%20%20I%20am%20really%20happy%20it%20ends%20on%20a%20happy%20note.%20%20I%20would%20like%20to%20try%20other%20cuts%20of%20bison%20in%20the%20future,%20if%20they%20became%20available%20for%20purchase%20in%20my%20area.%20%20I%20have%20seen%20ground%20bison%20at%20the%20stores,%20but%20that's%20where%20the%20selection%20ends.%20%20Such%20a%20shame,%20because%20bison%20has%20so%20much%20to%20offer.%3C/p%3E%3Cp%3EHow%20about%20you?%20%20Do%20you%20have%20any%20experience%20eating%20or%20cooking%20with%20bison?%20%20If%20so,%20I'd%20love%20to%20hear%20about%20it!%3C/p%3E%3Cp%3EThe%20Bison%20Council%20has%20teamed%20up%20with%20Allrecipes%20to%20spread%20the%20word%20about%20delicious,%20nutritious%20bison%20via%20Allstars%20such%20as%20myself.%20%20(Disclaimer:%20%20I%20was%20provided%20with%20product%20for%20this%20recipe%20via%3C/p%3E%3Cp%3EAllrecipes%20as%20part%20of%20the%20Allstars%20program.%20%20All%20opinions%20expressed%20in%20this%20post%20are%20mine.)%3C/p%3E){kind=link}
