This morning I decided to experiment with a biscuit casserole I had seen using store bought biscuits. I immediately thought of my 3 Ingredients Biscuit recipe I have been making lately with self rising flour. These are some of the lightest biscuits I have ever made and come out perfect every time. They also go together very quickly. Sprinkle some regular flour on a piece of waxed paper to pat the biscuit dough out on and clean up is done as soon as you cut the biscuits.
In Nashville, I went to the Loveless Cafe a while back and they serve one of the best biscuits I have ever eaten. I could of sat there and just ate the biscuits and jam it was that good. I bought a bag of their mix to bring home and they were almost as good as at the café but not quite. If you are like me and from the north, I bet like me you hardly ever use self rising flour. I know it was something I never saw in my mom’s kitchen. Since moving south I have been attempting to learn how to make a great biscuit and so far self rising flour seems to be one of the tricks. I use White Lily Self Rising Flour but am open to suggestions and tips if anyone has something to share.
I loved the result of the biscuits with the eggs, I just wished I had made some sausage gravy to go with the casserole. I know next time I sure will. With the gravy, I think if you doubled this recipe it would easily serve 10 people. As this casserole bakes you end up with a layer of eggs on the bottom, then the biscuits topped with cheese and bits of green onion throughout. This is not a casserole you can make the night before but it can be put together in less than 15 minutes plus baking time, the morning you want it if you are in a hurry.
Biscuit Bake Casserole
Yield: Serves 4
Prep Time: 15 minutes
Cook Time: 22 minutes
Total Time: about 35 minutes
As this biscuit casserole bakes you end up with a layer of eggs on the bottom, then the biscuits topped with cheese and bits of green onion throughout.
Ingredients:
- 3 Ingredients Biscuits recipe (link above) or 2 cans large buttermilk biscuits, cut into quarters
- 4 eggs
- 1/2 cup milk
- 2 - 3 green onions
- 1 cup sharp cheddar cheese
- salt and pepper
Directions:
Preheat oven to 400 degrees.
Place biscuits or quartered biscuits in the bottom of a greased 8 x 8 pan.
Beat eggs together in a bowl. Whisk in milk, salt and pepper. Add cheese and green onions. Pour over biscuits.
Bake for 20 - 25 minutes or until center is firm to the touch and biscuits are browning.
Note: It doesn't look like it in the picture but my biscuits were actually cut with a 2 inch round cutter. You could also cut them into squares with a knife.
