Even though the “traditional” holiday season is over our other holiday season is in full swing. We love football celebrations and most importantly we love football food. In addition, we’re also celebrating my birthday. There’s nothing like a big game celebration!
I’m sure my family was expecting me to go into my stash of pearls, bling and all things girly for my birthday this year, but I fooled them. I’m put on the “ritz” in a different way. This football birthday celebration was also a bit sentimental. The Mr. and I met in January 40 years ago and the day of my birthday that year was also the day of a big game, so why not have a big game celebration this year. Honestly, as long as I’m celebrating with my family it’s precious time well spent.
I will admit though that I am more interested in the food than the game and I know I’m not alone. That being said, when friends and family are gathered around the TV hootin and a hollerin, I don’t want to be stuck in the kitchen for most of the game. This football spread comes together quickly so we can all enjoy the festivities at the same time.
Just as there are two teams in the Big Game, we’re also a house divided. Not about the game but in our choice of Coca-Cola products. I’m a Coke Zero fan and the Mr. loves Coca-Cola. So that neither of us is disappointed both drinks are a part of this spread. You can take these beverages to the house and score with your biggest fans by taking advantage of the special savings on Coca-Cola 500ml 6 packs. They’re 2 for $5.00 at Walmart.
While at Walmart, I also picked up some RITZ® Crackers. They are the perfect base for the three toppings I made for this party. These come together quickly and pack a flavorful punch.
Big Game Celebration Recipes
- Cream Cheese/Chutney Topping
- 8 oz whipped cream cheese, room temperature
- ½ cup chutney, (I used fig/mango)
- Cracked black pepper to taste
- Mix all ingredients, spoon into dish and serve with RITZ® Crackers. Store any leftovers in an airtight container in refrigerator.
- Pear/ Gorgonzola Topping
- 1 medium pear, finely chopped
- 1 cup cream cheese, softened
- ½ cup gorgonzola cheese, finely crumbled
- 2 TBS honey
- Mix all ingredients, spoon into dish and serve with RITZ® Crackers. Store any leftovers in an airtight container in refrigerator.
- Bacon/Pimento Cheese Topping
- 5 slices of bacon, cooked and finely chopped
- 1 cup pimiento cheese
- 1 medium scallion, minced
Mix all ingredients, spoon into dish and serve with RITZ® Crackers. Store any leftovers in an airtight container in refrigerator.
Since this was also a birthday celebration cupcakes were in order. I made Chocolate Cupcakes with Coca-Cola Frosting. This frosting is satiny smooth and spreads like a dream.
Coca-Cola Frosting
¼ cup powdered cocoa
½ butter
6 TBS Coca-Cola
4 cups powdered sugar
1 tsp vanilla
In a medium saucepan, mix together cocoa, Coca-Cola and butter. Stir over medium heat until melted then bring to a boil. Remove from heat and add powdered sugar, vanilla and blend well. Let frosting cool until stiff enough to frost or pipe onto cupcakes. Makes enough to frost 2 dozen cupcakes.
Also on the menu; Creole Pork Sliders, Coleslaw, Football Sugar Cookies
The tiles and the astro-turf samples are about the same size so no cutting was necessary. Once your hot glue gun is ready it’s simply a matter of applying glue to the back of the asto-turf and applying it to the coaster. Let them sit until well adhered. In between uses, wrap them in tissue paper and store in a box.
