%20is%20so%20expensive.%20I%20still%20don't%20understand%20how%20pesticides,%20antibiotics,%20hormones%20and%20such%20can%20be%20less%20expensive%20than%20growing%20the%20product%20the%20way%20it's%20meant%20to%20be....as%20is.%3C/p%3E%3Cp%3EAnd%20that's%20just%20the%20tip%20of%20the%20iceberg.%20I'll%20leave%20it%20at%20that.%3C/p%3E%3Cp%3EI%20found%20some%20wonderful%20pasture-grazed%20ground%20beef%20for%20about%20$5.00%20lb.%20(the%20price%20will%20be%20going%20up%20by%20$2.00%20per%20pound%20later%20this%20month).%20I%20splurged%20and%20bought%20some.%3C/p%3E%3Cp%3EAs%20I%20continued%20to%20wander%20around%20the%20market,%20my%20mind%20was%20trying%20to%20decide%20what%20to%20do%20with%20it.%20Of%20course%20spaghetti%20and%20meatballs%20came%20to%20mind...as%20did%20sweet%20and%20sour%20meatballs,%20and%20a%20number%20of%20other%20common%20menus.%20None%20sounded%20right.%20I%20didn't%20want%20to%20hide%20the%20flavor%20of%20the%20beef....I%20felt%20it%20needed%20to%20shine,%20center%20stage%20in%20order%20for%20me%20to%20really%20taste%20the%20difference.%3C/p%3E%3Cp%3ELuckily,%20in%20a%20moment%20of%20silliness,%20when%20I%20got%20home%20I%20decided%20to%20check%20Mastering%20the%20Art%20of%20French%20Cooking,%20As%20I%20opened%20the%20book,%20I%20thought%20%22surely%20the%20French%20don't%20eat%20something%20as%20mundane%20as%20ground%20beef!%22%3C/p%3E%3Cp%3EOooooh,%20how%20wrong%20I%20was.%3C/p%3E%3Cp%3EThis%20delicious%20patty%20would%20make%20an%20amazing%20hamburger!%20(what%20do%20you%20think%20of%20them%20apples?)%20Simple,%20few%20ingredients%20and%20lots%20of%20butter.%20Seems%20to%20be%20a%20huge%20theme%20in%20MtAoFC.%20I%20don't%20know%20why%20I%20never%20realized%20this%20before%20but...Julia%20Child%20was%20the%20queen%20of%20butter.%20Paula%20Deen%20has%20nothing%20on%20her!%3C/p%3E%3Cp%3EGround%20Beef%20with%20Onions%20and%20Herbs%3C/p%3E%3Cp%3E(Bifteck%20Hache%20a%20la%20Lyonnaise)%3C/p%3E%3Cp%3EIn%20a%20heavy%20skillet,%20melt%202%20TB%20butter.%20Cook%20the%20onions%20in%20the%20butter%20until%20tender%20but%20not%20browned,%20about%2010%20minutes.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20mix%20together%20the%20onions,%20beef,%202%20TB%20softened%20butter,%20salt,%20pepper,%20thyme%20and%20egg.%20Mix%20until%20thoroughly%20blended.%20Form%20the%20mixture%20into%206%20patties,%20about%203/4%20inch%20thick.%3C/p%3E%3Cp%3EAt%20this%20point%20you%20can%20cover%20them%20and%20place%20in%20the%20refrigerator%20until%20ready%20to%20cook.%3C/p%3E%3Cp%3EJust%20before%20sauteing,%20lightly%20coat%20each%20patty%20in%20flour,%20shaking%20off%20any%20excess%20flour.%3C/p%3E%3Cp%3EOver%20medium-high%20heat,%20melt%201%20TB%20butter%20along%20with%20the%20oil.%20When%20the%20foam%20from%20the%20butter%20begins%20to%20subside%20(this%20indicates%20that%20the%20pan%20is%20hot%20enough%20to%20sear%20the%20meat)%20saute%20the%20patties%20for%202-3%20minutes%20per%20side%20or%20more,%20depending%20on%20how%20you%20like%20your%20meat,%20rare,%20medium,%20well%20done.%3C/p%3E%3Cp%3EMine%20were%20on%20the%20well%20done%20side%20but%20the%20searing%20was%20perfect!%3C/p%3E%3Cp%3ERemove%20and%20keep%20warm%20while%20making%20the%20sauce.%3C/p%3E%3Cp%3EPour%20the%20fat%20out%20of%20the%20skillet.%20add%20in%20the%20liquid%20of%20your%20choice%20and%20rapidly%20boil%20down%20until%20it%20has%20reduce%20to%20an%20almost%20syrupy%20consistency,%20scraping%20up%20the%20delicious%20nuggets%20from%20the%20bottom%20of%20the%20pan.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20gently%20stir%20in%202%20-%203%20TB%20of%20butter,%201/2%20TB%20at%20a%20time.%20Pour%20over%20the%20patties.%3C/p%3E%3Cp%3ESo%20good.%20So%20simple.%20And%20as%20far%20as%20the%20beef%20goes?%20Well,%20it%20has%20a%20fuller%20flavor...a%20bit%20richer.%20But%20then%20again,%20this%20was%20ground%20top%20sirloin.%20I'm%20not%20saying%20that%20none%20of%20the%20generic%20ground%20beef%20isn't.%20I've%20heard%20chefs%20say%20that%20often%20times,%20ground%20beef%20is%20made%20from%20left%20over%20bits%20of%20chuck.%20This%20farm%20happens%20to%20make%20theirs%20with%20sirloin...and%20nothing%20else.%20No%20bits%20and%20pieces%20of%20leftover%20anything.%3C/p%3E%3Cp%3EHonestly,%20I%20shouldn't%20complain%20too%20much%20about%20the%20cost.%20I%20mean,%20I%20spend%20more%20for%20my%20favored%20rib-eye%20steaks.%20But%20beef%20in%20this%20household%20is%20not%20cooked%20as%20often%20as%20chicken.%20Ground%20beef%20even%20less.%20Next%20time%20I%20decide%20to%20buy%20ground%20beef,%20I%20will%20think%20twice%20when%20at%20the%20supermarket.%20If%20it%20was%20a%20staple....I%20don't%20think%20I'd%20be%20able%20to%20afford%20to%20do%20so.%3C/p%3E%3Cp%3EReliving%20this%20recipe%20is%20making%20my%20stomach%20growl.%20Wish%20I%20had%20some%20leftovers%20but%20those%20were%20quickly%20consumed%20the%20next%20day....%3C/p%3E%3Cp%3EBON%20APPETIT!%3C/p%3E){kind=link}
