- Heat oven to 325 degrees. In small heavy saucepan, put together butter, 1/4 cup whipping cream and brown sugar. Cook over low heat just till butter is melted, stirring occasionally. Pour into two 9 or possibly 8 inch round cake pans; sprinkle evenly with minced pecans.In large bowl, put together cake mix, water, oil and large eggs at low speed till moistened; beat 2 min at highest speed. Carefully spoon batter over pecan mix.
- Bake at 325 degrees for 35 or possibly 45 min or possibly till cake springs back when touched lightly in center. Cool 5 min. Remove from pans. Cool completely.
- In small bowl, beat 1 3/4 cups whipping cream till soft peaks form. Blend in confectioners' sugar and vanilla; beat till stiff peaks form.
- To assemble cake, place 1 layer on serving plate, praline side up. Spread with 1/2 of the whipping cream. Top with second layer, praline side up; spread top with remaining whipped cream. Garnish with whole pecans or possibly chocolate curls if you like. Store in refrigerator.
