- In large saucepan, bring the half and half, lowfat milk, and salt to a boil; then add in rice. Boil gently 45 to 50 min. Keep stirring down as mix rises while gently boiling. In the meantime, beat 2 Large eggs. Fold in 3/4 c. sugar and 1 tsp. vanilla. Add in this to boiled mix as soon as you feel it thickening.
- Mix as you pour it in. Let boil for 1 minute more and then pour into a casserole and sprinkle with cinnamon. Raisins may be added at the very end. This will keep well for days in the refrigerator.
