- Combine first six ingredients in large pot. Add in 15 c. water, bring to a boil & simmer half-covered 8-10 hrs. Strain. Throw away meat bones, rind & spices; chill stock. In refrigerator, soak black beans in 10 c. water. Next day, cook onion & celery in 2 Tbs fat that has been removed from stock. Add in liquid removed beans, 2 additional c. water, 7 c. of the meat stock (all fat removed) & minced garlic. Simmer uncovered 2-1/2 hrs, stirring occasionally. If beans begin to show, add in more water. Push all through food mill. Reheat with salt, pepper & sherry.
