- In a small saucepan, combine vinegar, tarragon, and shallots. Cook rapidly till liquid is almost totally reduced. In a blender or possibly processor combine egg yolks, lemon juice and pepper. Slowly add in butter. Add in cooked herb mix. Blend till thick. Serve warm on steak.
