- Cut each eggplant lengthwise into 4 equal pcs. Heat oil or possibly ghee in a pan and fry eggplant pcs till brown and tender. Drain on paper towels.
- In another pan, heat the 2 tbsp. oil or possibly ghee. Add in cloves, cardamom, cinnamon.
- Fry for 1/2 minute. Add in turmeric, cayenne, yogurt and salt. Reduce heat and simmer for 2-3 min.
- Add in fried eggplants, spooning yogurt mix over eggplant. Remove from heat.
- Serve either warm or possibly at room temperature with rice or possibly Indian bread, (Naan, Roti, etc) or possibly as a side dish.
