Really whats not to love about shellfish? Lobster, shrimp, mussels, clams! They are refreshing, fun to eat and the perfect way to a light meal on hot summer days.
What makes these even better is when you make them in a broth. In this case the broth is beer. I bought one very large bottle of my favorite beer. I used most of it for the broth, but saved just enough for me to have a glass of brew with my meal. Making toasted sourdough bread using clarified butter is a perfect match to soak up all that delicious broth.
I told my daughter that I was about ready to serve my clams and she immediately changed her plans and sat down at the dinner table with me as we shared the glass of beer and noshed on these clams.

2 pounds littleneck clams 2 Tablespoons clarified butter ½ jalapeno pepper, seeded and minced 3 cloves garlic, minced 12 ounces beer (I used Sierra Nevada) ⅛ cup cilantro leaves, chopped ⅛ cup flat-leaf parsley, chopped juice of a lime Directions
Place the clams into a large bowl and cover with room temp water. Let sit for 20 minutes. Drain the water. (It’s going to be pretty sandy.) Add more water. Let ’em sit another 20. Now, add ½ tsp salt and let sit for 20 more minutes. Drain the water. Give the clams a good scrub and set them aside. In a large pan over medium heat add the clarified butter. Once the bubbling settles, add the jalapeno and garlic; sauté 1 minute. Add the clams to the pan and pour in the beer. Toss around for a second Cover and let them steam anywhere from 5 to 10 minutes, until they all pop open If any don’t open, discard them! Now, fish out the clams and arrange them in little bowls. Back in the pan, add the cilantro and lime juice. Let simmer and reduce for about 5 minutes. 3.3.3077
