- Heat butter and set aside. In large mixing bowl add in flour, cornmeal, sugar, baking pwdr, and cayenne. Add in beer and egg to melted butter; mix. Make a well in the center of the dry ingredients and pour in beer mix. Stir briskly to combine being careful not to over stir. (Batter should be lumpy.) Stir in cheese. Fill muffin c. 2/3 full. Bake at 400 degrees for 20 to 25 min. Remove immediately and cold on wire rack.
