Beef with Broccoli: For those Tiresome Days

Beef with broccoli is my go to meal when I want to cook something in a jiffy, especially on those days when my wife and I are tired of cooking. Yes, I too do have my times when I can get a little under the weather and don’t feel like cooking.

Let me explain… When you have 12 recipes to post and you’re cooking up a storm doing at least 3 recipes a day until you’re done, it can and does take a toll on you. You actually don’t even feel like seeing the kitchen, far less another pot on the fire. lol!! But, it eventually subsides and I’m ready for another 12 recipes again.

After mastering this quick and easy beef and broccoli recipe you won’t go back to your normal repertoire of cooking and would want to make it more often. It’s also a great companion to rice or noodles, which ever you wish. For the noodles though, I would toss it in the last step right before you add the cornstarch mixture. More on that later.

Anyhow back to me getting tired of cooking or even food blogging for that matter. What you see sometimes being posted as a recipe is the culmination of at least 3 to 4 hours of work from the cooking of the dish, to the photography, editing, formatting pictures and the actual post where I average at least 350 -450 words per recipe post. So, let’s see… 350 words by 12 recipe posts that’s …

…four thousand two hundred words per month and I haven’t included the two articles we post as well which are long and average 1500 words per article.

So, that’s almost 7000 words we write per month for the blog and we now have Compère Magazine that’s growing in pages……No wonder we’re tired sometimes ( lol!!) But, it’s a labour of love driven by pure passion for Trini food and the love and appreciation I get from my fans.

Anyhow enough about me, and let’s get cooking. So, get out you chopping boards and dust out your wok. Here’s beef with broccoli, a quick and easy recipe for those days when you don’t feel like cooking too much. Enjoy!

Season the beef with the salt, sugar, soy sauce and rice cooking wine.

Marinate for at least 20 minutes.

Chop the broccoli and set aside.

Heat the peanut oil and add the ginger. Saute for 1 minute.

Add the onions and saute for 1 minute.

Add the beef . Stir until the beef changes colour and there is no blood showing in the meat.

Add the broccoli stir for 1 minute.

Add the cornstarch mixture and stir until evenly coated. Serve immediately.

Note: If you want to add noodles add it right before you pour the cornstarch mixture.

Here I’m having my beef and broccoli with rice. Yum.
