- Preheat oven to 350 degrees. Cook beef in a large skillet over medium-high heat, stirring till browned and crumble., about 5 min. Drain. Add in seasoning mix; mix well.
- Grease an 8-inch round casserole; arrange half of tortillas over bottom. Layer with beef, 2 c. Monterey jack and onion.
- Arrange remaining tortillas over onion. Pour enchilada sauce over tortillas. Bake till tortillas are soft and juices bubble, about 35 min.
- Layer remaining cheese over tortillas. Bake till cheese is bubbly, about 10 min. Top with green onions.
- NOTES : Variation: For a touch of heat, add in 1 (4 oz) can of minced green Chiles with the seasoning fold in step 1.
