Beef/Chicken/Shrimp Fajitas
Ingredients:
- 1 (10 ounce) bag coleslaw mix
- 1/4 cup sliced radishes
- 2 tablespoon green onions-diced
- 1/2 cup sour cream or mayonnaise depending on your preference, I've done both
- 1/2 lime-freshly squeezed
- 2 tablespoons honey
- 1/2 teaspoon salt
- 1/2 cup onion-sliced
- 1 rotisserie chicken-diced
- 1/4 cup chicken fajita seasoning
- 1/4 cup water
- 8 flour or corn tortillas-warmed
Directions:
In a large bowl combine the coleslaw, radishes and green onions. In another bowl combine the sour cream, lime juice, honey and salt. Mix thoroughly and add to the coleslaw mixture; set aside.
In a large skillet, heat about 2 tablespoons olive oil over medium heat. Add in the onions, cooking for about 5 minutes, then add in the chicken and sprinkle with the fajita seasoning--adjusting the seasoning to your taste. Add in the water, bring to a boil and stir until cooked through.
Warm the tortillas in the microwave, then top with the chicken mixture and add the coleslaw on top. Squirt a little more lime juice over the top and add a few diagonally cut green onions.
